For centuries, the “Diamonds of Black Truffles” have been discovered in the forests by trained pigs or dogs. Because of their flavor, this is a chef favorite as a unique meat alternative, and legend has it black truffles can help slow down aging and boost immunity.

Fresh Tagliatelle Pasta is our pasta choice for this dish. Firstly, it is as fresh as pasta one can get without traveling to the villages of Italy, witnessing someone in the kitchen making it from scratch! Secondly, it pairs perfectly for this recipe with Fresh Black Truffles.
How To Prepare this Dish:
There are a few different ways to prepare this simple yet decadent dish. The way we like to prepare is by following the six simple steps below with the following ingredients and utensils:
Utensils: Large Pot, Colander, Wooden Spoon, Large Saute Pan, Small Bowl, Cheese Grater, Truffle Shaver.
- 2 oz or more of Fresh Black Truffles
- 1 lbs. or more Fresh Tagliatelle Pasta
- 10 tbsp Butter
- 1 Cup Parmesan Cheese (be careful not to put too much)
- Chef's Choice Caviar
Step 1 of 6: Ingredients: 1 Cup Parmesan Cheese - 1 lb. Tagliatelle Pasta - Salt Utensils: Large Pot, Cheese Grater Cooking Step: Cook Fresh Tagliatelle Pasta in a large pot of salted boiling water for 2-3 minutes maximum. Be careful not to overcook the pasta. Unlike dry pasta, Fresh Pasta cooks much faster. Grate Parmesan Cheese.
Step 2 of 6: Ingredients: 10 tbsp butter Utensils: Large Saute Pan Cooking Step: Meanwhile, melt butter in a large saute pan.
Step 3 of 6: Ingredients: (Pasta Water from the bowl) Utensils: Colander- Small bowl Cooking Step: Save/reserve some of the pasta water before straining the pasta from the bowl.
Step 4 of 6: Cooking Step: Add Cooked Pasta to the saute pan and toss to mix with butter.
Step 5 of 6: Ingredients: Salt & Pepper Cooking Step: Add grated cheese (if desired) and some pasta water to loosen the mixture to the desired consistency and mix to combine—season to taste with salt and pepper.
Step 6 of 6: Ingredient: Fresh Black Truffles Utensils: Truffle Shaver Cooking Step: Thinly shave the black truffle over each bowl at the table. Let the truffle sit on the pasta for 30 seconds or so. Top it off with Caviar and enjoy!
