Fresh Tagliatelle Pasta is our pasta choice for this dish. Firstly, it is as fresh as pasta one can get without traveling to the villages of Italy, witnessing someone in the kitchen making it from scratch! Secondly, it pairs perfectly for this recipe with Fresh Black Truffles.
There are a few different ways to prepare this simple yet decadent dish. The way we like to prepare is by following the six simple steps below with the following ingredients and utensils:
Large Pot, Colander, Wooden Spoon, Large Saute Pan, Small Bowl, Cheese Grater, Truffle Shaver.
Ingredients: 1 Cup Parmesan Cheese - 1 lb. Tagliatelle Pasta - Salt
Cooking Step: Cook Fresh Tagliatelle Pasta in a large pot of salted boiling water for 2-3 minutes maximum. Be careful not to overcook the pasta. Unlike dry pasta, Fresh Pasta cooks much faster. Grated Parmesan Cheese.
Cooking Step: Meanwhile Melt butter in a large saute pan.
Cooking step: Save/reserve some of the pasta water before straining the pasta from the bowl.

Cooking Step: Add Cooked Pasta to saute pan and toss to mix with butter.
Ingredients: Salt & Pepper
Cooking Step: Add grated cheese (if desired) and some pasta water to loosen the mixture to desired consistency and mix to combine—season to taste with salt and pepper.
Cooking step: Thinly shave the black truffle over each bowl at the table. Let the truffle sit on the pasta for 30 seconds or so, and enjoy!
We highly recommend consuming the truffles as soon as they are received for the best experience. Just like any other fresh produce, Fresh Truffles have a minimal shelf life (3-5 days); therefore, the quality and freshness, and their unique aroma smell decline daily. Truffles should be kept inside a paper towel (not plastic bags) in the fridge and separated from one another. You may also place truffles in a container filled with eggs as the truffles' aroma is absorbed by the surrounding eggs!
