SERVING & PREPARATION RECOMMENDATIONS

What Is the Proper Serving Temperature for Dorasti Products?

Serving temperature plays a critical role in flavor, texture, and overall experience:

  • Caviar: Best served chilled at 34–38°F (place the caviar on top of a bowl of ice)
  • Sea Urchin (Uni): Chilled, just above refrigeration temperature.
  • Fresh Seafood (Trout, etc.): Cold but not ice-cold
  • Frozen Seafood (after thawing): Serve cold immediately after proper refrigeration thaw

Never allow delicate seafood to sit at room temperature for extended periods prior to serving.

What Utensils Should Be Used With Caviar & Delicate Products?

Caviar and other delicate products should only be served using non-reactive utensils, such as:

  • Mother-of-pearl
  • Bone or horn
  • Plastic
  • Glass

It's not recommended to use metal utensils when serving caviar, as they will react with the roe and can alter the flavor profile.

How Should Caviar Be Served for the Best Experience?

For optimal enjoyment:

  1. Chill the unopened tin on ice for 10–15 minutes before opening
  2. Open gently without agitating the eggs
  3. Serve on:

    Blinis or toast points

    With crème fraîche

Or traditionally on the back of the hand

  4. Serve immediately and keep chilled throughout service

Avoid stirring or compressing the roe, which can break the eggs and alter texture.

How Should Sea Urchin (Uni) & Fresh Seafood Be Served?

  • Keep cold until just before service
  • Handle gently to preserve structure
  • Serve immediately after removal from refrigeration
  • Avoid excessive handling or exposure to air

Uni and fresh seafood degrade rapidly once exposed to air and warmer temperatures.

How Should Frozen Seafood Be Served After Thawing?

Once fully thawed under refrigeration:

  • Keep cold until immediately prior to serving
  • Do not leave at room temperature
  • Consume within 24–48 hours
  • Never refreeze after thawing

Improper post-thaw handling will permanently affect texture and flavor.

How Much Caviar Should Be Served Per Person?

General portion guidelines:

  • Tasting portion: 10–15 grams per person
  • Appetizer portion: 15–30 grams per person
  • Indulgent tasting or special events: 30+ grams per person

Portion sizes may vary depending on the course structure and whether caviar is served alone or as part of a composed dish.

What Are the Best Pairings for Caviar & Seafood?

Classic and recommended pairings include:

  • Champagne (Brut or Extra Brut)
  • Premium vodka (well-chilled)
  • Dry white wines with high acidity
  • Traditional accompaniments such as:
    - Blinis
    - Warm Toasted Bread (French Baguette)
    - Crème fraîche
    - Lightly salted butter or non-salted butter with warm toast (French Baguette)

Flavored pairings that overpower delicate flavors are not recommended. Good caviar should be enjoyed in its purest and simplest form.

About dorasti

Dorasti is a luxury purveyor of premium caviar, seafood, and gourmet delicacies with more than 40 years of experience in the global caviar and specialty foods industry. We source directly from a highly selective network of responsible aquaculture farms and specialty producers who meet our strict standards for quality, sustainability, and ethical practices.

We do not compromise on quality—ever.

What Makes Dorasti Different?

Dorasti operates on a true farm-to-table and producer-direct model. Unlike mass-market distributors, we control quality through every stage of the process:

  • Strict grading and quality inspection standards
  • Proprietary salting, processing, and handling methods
  • Temperature-controlled logistics from origin to delivery

We believe that not all caviar, seafood, or gourmet products are created equal. Quality is determined by a combination of genetics, water quality, nutrition, harvesting techniques, and processing expertise. Dorasti refuses to take shortcuts for the sake of cost savings, even when market pressures encourage it.

Sustainability & Ethical Sourcing

Sustainability is not a marketing concept at Dorasti—it is a foundational business principle. Our sourcing partners follow rigorous aquaculture and environmental stewardship practices designed to protect ecosystems and ensure the long-term viability of sturgeon and other marine species.

Long before sustainability became an industry trend, Dorasti’s founder was among the early advocates for responsible sturgeon farming in the 1980s, helping shift the industry toward ethical aquaculture practices that are now considered the global standard.

PRODUCT HANDLING & INSTRUCTIONS

What Should I Do Immediately After My Order Is Delivered?

This step is critical for preserving quality and food safety:

  1. Open the shipping box immediately
  2. Confirm whether your items are refrigerated or frozen
  3. Place refrigerated items directly into the refrigerator
  4. Place frozen items directly into the freezer
  5. Inspect for any visible damage, leakage, or packaging failure

Delays in proper storage may permanently compromise product integrity.

How Should Refrigerated Products Be Stored?

(Caviar, Uni, Trout, Truffles)

  • Refrigerate immediately upon receipt
  • deal temperature range: 28–36°F
  • Store in the coldest part of the refrigerator (never the door)
  • Keep tightly sealed until ready to use
  • Keep away from strong odors and cross-contamination
  • Once opened, follow product-specific consumption timelines

Refrigerated products should never be frozen unless explicitly stated on the product page.

How Should Frozen Products Be Stored?

(Bluefin Tuna & Omakase Kit Components)

  • Place directly into the freezer upon receipt
  • Store at 0°F or below
  • Keep sealed in original vacuum packaging
  • Never allow partial thawing and refreezing

Refreezing previously thawed seafood permanently damages texture and quality and may create food safety risks.

What Is the Proper Way to Defrost Frozen Products?

To preserve texture, flavor, and food safety, frozen products must be thawed slowly:

  1. Keep the product sealed in its original vacuum packaging
  2. Place in the refrigerator
  3. Allow to thaw for 12–24 hours- to watch how to defrost Otoro Loins in less than 24 hours please refer to our link video by clicking HERE.
  4. Once fully thawed, keep refrigerated and consume within 24–48 hours

Never:

  • Thaw at room temperature
  • Thaw using hot or warm water
  • Microwave to defrost
  • Remove vacuum packaging during thawing

Improper thawing permanently degrades product quality and voids eligibility for quality-related claims.

What Are the Most Common Handling Mistakes to Avoid?

  • Leaving a delivery unattended for extended periods
  • Placing frozen items in the refrigerator instead of the freezer
  • Freezing refrigerated items such as caviar or uni
  • Refreezing previously thawed seafood
  • Thawing at room temperature
  • Using unclean or reactive utensils on delicate products

These errors are the leading cause of quality degradation and are not considered product defects.

Who Is Responsible for Product Condition After Delivery?

Dorasti maintains strict quality control from sourcing through shipment. Once a package is marked as delivered by the carrier, responsibility for proper storage, handling, thawing, and use transfers to the recipient.

Dorasti is not responsible for quality degradation resulting from improper handling after delivery.

What makes Dorasti caviar different?

Firstly, we are farm-to-table. Our sturgeons are all bred sustainability in the most humane conditions and water quality. The sturgeon specie is one of the oldest species dating back thousands of years. There is even evidence that the sturgeon is one of the only species that dates back to the dinosaur age. Therefore it is paramount to do everything we can to do our part by practicing sustainable methods, in-fact our father was one of the pioneers who advocated for sustainability and helped start the first sturgeon farm in the 1980s when it was deemed as ridiculous by the pundits.

Secondly, at our company, we have a famous saying; "Not all sturgeon roe is created equally." This could not be more true. Just as humans come in all different body types, forms, and genetics, the sturgeon is no different.

Furthermore, genetics is just one of the many elements that determine the quality of excellent caviar; the environment and nutrition make up another big part of this. At Dorasti, we take pride in breeding the sturgeons in the cleanest waters by providing the highest quality feed. We refuse to take short cuts in the name of cost-savings for a lower quality and graded caviar and product. Learn more about us by subscribing to our mailing list and check out our Stories tab.

How can caviar stay fresh? (Unopened, Opened, Frozen)

Unopened: The shelf life of a vacuum-sealed caviar tin is approximately 4-6 weeks if kept in the coldest part of the fridge. The recommended storage temperature is between 37-42 degrees. You will be provided an expiration date on the bottom of your caviar tin. Please ensure to keep your caviar away from dairy products!

Opened: For the best experience and quality, caviar should be enjoyed in one sitting! However, if stored properly in the fridge and sealed, it can stay fresh for another 24 hours. However, we do not recommend this as caviar's taste, texture, and smell can change depending on the circumstances!

Freezing: Dorasti Caviar is premium-grade caviar! We do not recommend freezing premium-grade caviar ever! Frozen caviar can stay consumable for up to 6 months. However, the taste and texture will deteriorate substantially!
